What to Eat in Guyana: Coconut Choka, Cassava and a Country of Many Kitchens

A journey through Guyana can move from city restaurants to ranch tables and community kitchens, but the food keeps explaining the country. Its flavours reflect Indigenous traditions, African and Indian heritage, European influences and the ingredients of the rainforest, rivers and coast.

One of the dishes Becca Marsh remembers most clearly is coconut choka. Coconut is roasted over a flame, then ground and seasoned into a smoky, rich accompaniment. It is simple food with real depth, and a reminder that some of Guyana’s most memorable meals are rooted in careful preparation rather than elaborate presentation.

Cassava is another essential ingredient. Indigenous communities have developed sophisticated ways of processing it, transforming a potentially toxic root into cassava bread and other staples. The knowledge behind that process is as important as the food itself: it represents generations of practical understanding passed through families and communities.

Elsewhere, look for curries, pepperpot and cook-up rice, alongside river fish, tropical fruit and fresh juices. Meals vary dramatically from Georgetown to the Rupununi, and availability often follows season, location and what can be produced locally.

The best approach is to eat with curiosity and respect. Ask what is local, accept recommendations, and remember that in remote lodges and villages a meal may also be an invitation into somebody else’s culture, work and way of life.
